Healthy Snacks

My sister has lost 3 and a half stone in the past year and looks amazing. She eats really well so I visited her today and she gave me this quick and easy recipe for a healthy snack. Make in a deep muffin tin:

Savory Muffins: 

Place a slice of turkey or ham into each section as the base. (I greased each one with coconut oil to avoid sticking)

Add chickpeas. And any other finely diced veg you like.

Crack an egg over each one.

And bake! Simples. 👏

I made them today and had a glass of Pinot Noir while baking. Thought I was Nigella! Sure what else would you be doing on Maternity Leave #domesticgoddess 💗
