With January in full swing, I am being really good with food and exercise all week so I treated us to some homemade cheesecake at the weekend. I figured if it's homemade, it's a little more acceptable....no?
So easy to make and DELICIOUS to eat. Timmy loved it so I am looking forward to making it again already. Hope you enjoy xo
24 Oreo Cookies
3ts melted butter
3 (250g) packages of softened Philadelphia Light Cream Cheese
3/4 cup sugar
-Preheat oven to 180/350.
-Finely crush 16 cookies in resealable plastic with a rolling pin.
-Place in a bowl and add butter. Mix them well and press firmly onto bottom of 9-inch round tin.
-Beat cream cheese, sugar and vanilla in a large bowl with electric mixer on medium speed until well blended.
-Add eggs, one at a time and beat just until blended.
-Chop or crush remanining 8 cookies. Gently stir half of the chopped cookies into cream cheese batter. Pour over prepared crust and sprinkle the remaining chopped cookies on top
-Bake for 45 mins or until centre is almost set. Cool it and put into the refrigerator for 3 hrs or overnight.
